Raquel Van den Eynde

Raquel Van den Eynde is a PhD candidate at the Department of Human Biology at Maastricht University, supervised by Prof. Ellen Blaak and Prof. Gijs Goossens. Her research focuses on precision nutrition: understanding why people respond differently to the same diet, and how dietary advice can be tailored to a person’s metabolic profile.

She works within the PRECINUT consortium, which tests diets tailored to a person’s metabotype, and on the GAIN study within the EU GLUCOTYPES project, which tests diets tailored to a person’s glucotype. She also studies urinary metabolites as a marker of diet in collaboration with Nestlé Research, and is writing a systematic review on tailoring diets to biological characteristics for weight loss.

Raquel trained as a dietitian and diabetes educator and obtained her MSc in Biomedical Sciences at KU Leuven in 2021. She then worked as a clinical trials research coordinator at UZ Brussel, and as a research assistant in the NIMO lab for one year before starting her PhD in April 2026.
